When using iCloud from the Mac where it says it backs up files for you, how do I get iCloud to NOT do backups?

In IOS, I can say not to backup, I believe, but on the Mac, I don't see how to tell iCloud to not backup files.

The only thing I can find is to delete backups that have been done, but not disable them in the first place.
